Cherry Swirled Overnight Oats

Old fashioned rolled oats and chia seeds soaked overnight in almond milk and maple syrup with swirls of sweet cherries. These cherry swirled overnight oats are so delicious and perfect for breakfast on the go.
Ingredients
Cherries
  • ½ teaspoon cornstarch
  • 2 teaspoons water
  • 2 cups cherries, pits removed
  • 1 tablespoon sugar
Overnight Oats
  • 1 cup old fashioned rolled oats
  • 1½ tablespoons chia seeds
  • 1½ cup almond milk
  • 2 teaspoons vanilla extract
  • 2-3 tablespoons maple syrup
Directions:
  1. In a small bowl, mix together cornstarch and water until the cornstarch has dissolved. In a small pot, add cherries, granulated sugar, and cornstarch mixture and cook over medium heat for about 5-8 minutes until the cherries have softened and the juices thicken. Set the cherries aside to cool for a few minutes.
  2. In a medium sized bowl, add old fashioned rolled oats, chia seeds, almond milk, vanilla extract, and maple syrup. Stir to mix all the ingredients until combined. Add cherries to the bottom of the mason jars. Divide the oat mixture into the mason jars. Add more of the cherries on top and use a spoon or fork to swirl it into the oat mixture.
  3. Let the cherry swirled overnight oats chill in the fridge overnight.
  4. If there are leftover sweetened cherries, top the cherry swirled overnight oats with more of the mixture before serving.
