Blueberries and Cream Steel Cut Oatmeal

Creamy steel cut oatmeal with swirls of blueberry jam in every bite. This blueberries and cream steel cut oatmeal is so delicious and the perfect breakfast for summer.
Ingredients
  • 4 cups water
  • 1 cup steel cut oats
  • 2 tablespoons maple syrup
  • ¼ cup almond milk
Blueberry Jam
  • 6 ounce fresh blueberries
  • 1 teaspoon water
  • 3 teaspoons granulated sugar
Topping
  • Almond milk for drizzling
  • Fresh and frozen fruits
Directions:
  1. In a medium sized pot, heat up the water until it comes to a boil. Add steel cut oats to the pot and allow it to cook for about 30 minutes. Make sure to stir every once in awhile to prevent the oats from sticking and burning at the bottom. Once the oats are cooked, remove the pot from heat and let it cool.
  2. Stir in maple syrup and almond milk to make the oatmeal sweet and creamy.
  3. When ready to serve, place some oatmeal into a bowl then top with blueberry jam.
  4. Add more oatmeal on top, and add another layer of blueberry jam. Use a fork or a knife or a chopstick to swirl the blueberry jam into the oatmeal.
  5. To make the blueberry jam, add blueberries, granulated sugar, and water to a small pot. Cook for about 10-15 minutes until the blueberries breakdown and thicken.
  6. Serve this blueberries and cream steel cut oatmeal with more almond milk, especially if the oatmeal is too thick. Top with fresh and frozen berries.
