Tomato Basil Burrata Toast

Thick toast topped with pesto, burrata, tomatoes, and bread crumbs. This tomato basil burrata toast is delicious and perfect as a fall snack or a light meal.
  • 2 thick slices of bread
  • 2 tablespoons pesto
  • 2-4 ounces burrata
  • 1 cup cherry tomatoes, sliced
  • small basil leaves
Bread crumbs
  • ½ cup cubes of day old bread
  • 1 tablespoon olive oil
  • salt and pepper
  1. Start with heating up thick toast. Once the toast is warm, spread pesto over it. Top with burrata and fresh sliced tomatoes.
  2. Garnish the toast with bread crumbs and small basil leaves.
  3. To make the bread crumbs, preheat the toaster oven to 425F. Line a baking sheet or baking pan with aluminum foil and lightly grease with olive oil or nonstick cooking spray. Cut day old bread into cubes. Toss the bread with olive oil and a little bit of salt and pepper until well coated. Toast the bread for about 10 minutes until browned. Crush the croutons into crumbs and sprinkle it on top of the toast.
  4. Serve the tomato basil burrata toast warm.
