Ingredients
  • ½ cup unsalted butter
  • ½ cup brown sugar
  • 2 tablespoons granulated sugar
  • 1 large egg, beatened
  • ½ tablespoon maple syrup
  • ½ tablespoon vanilla extract
  • ¾ cup all purpose flour
  • ½ teaspoon baking soda
  • ¾ teaspoon ground cinnamon
  • ⅛ teaspoon nutmeg
  • ¼ teaspoon salt
  • 1¼ cup rolled oats
  • ½ cup dried wild blueberries
  • ¼ cup chopped pistachios
Directions:
  1. In a medium mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth. Add a beaten egg and mix until combined. Then add vanilla extract and maple syrup and mix until combined. Set aside for now.
  2. In a separate medium mixing bowl, toss the flour, baking soda, ground cinnamon, ground nutmeg, and salt together. Add the dry ingredients to the wet ingredients and mix until combined.
