The first week of March has flown by so quickly. I love how bright and sunny it has been for weeks now. And it feels like spring is just around the corner. Especially with the grass so green and the flowers are in full bloom.

With March here, we’re quickly approaching a year since our lives changed as we know it. Just a few days ago, I received notification that a year ago, I was watching Hamilton at the Orpheum Theater for the second time. That feels like a lifetime ago. So much has changed since then. And I can’t wait for the day when we can go back to watching live performances without the fear of getting sick.

Which brings me to this banana bread.

Do you remember how in the early days of sheltering in place we were all looking for flour and yeast to stress bake? And how so many people were baking banana bread?

Well, I’m sharing a brand new banana bread recipe and this time, it’s filled with macadamia nut.

Seriously, after adding macadamia nut to banana bread, I don’t know if I can go back to walnuts again. Lol. I feel like banana macadamia nut might not be a common pairing around here, but it’s common in Hawaii. And after discovering it, I’m obsessed. The flavor of macadamia nut is so unique and it’s so delicious in banana bread.

This banana bread is super soft and moist and buttery. Each bite is filled with chopped macadamia nut and it’s so perfect for breakfast in the morning with coffee or tea. Or as an afternoon snack to fight off the hunger pangs. Sooo good.

Preheat the oven to 350F. Lightly grease a 9x5inch loaf pan with nonstick cooking spray or olive oil. Set aside for now.

In a small bowl, whisk together flour, baking soda, and salt until combined. Set aside for now.

In a medium sized bowl, beat together butter, granulated sugar, and brown sugar until light and fluffy. Next, beat in eggs and vanilla extract. Then add mashed bananas and Greek yogurt, and beat until well combined.

 

Add the dry ingredients to the wet ingredients. And mix until just combined.

Fold the macadamia nuts into the batter.

Pour the banana bread batter into the prepared loaf pan. Bake the banana macadamia nut bread for 50-55 minutes until the edges and top turn lightly browned. Insert a toothpick into the center of the banana bread. If the toothpick comes out clean, the banana bread is done. If not, bake for a few more minutes. Different ovens vary in temperature.

Allow the banana macadamia nut bread to cool for 10 minutes before slicing. Otherwise, the banana bread may fall apart.

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • ½ cup unsalted butter, room temperature
  • ½ cup granulated sugar
  • 1 cup brown sugar

  • 1 tablespoon vanilla extract
  • 3 large bananas, mashed
  • ½ cup plain Greek yogurt
  • 1 cup macadamia nut, chopped
