Happy November!

I hope you had a wonderful Halloween. As with everything this year, all holidays are different. We didn’t get to do much for Halloween, but that’s okay. It was still fun dressing my baby niece in cute costumes and taking photos with her.

But it’s November today! And it’s the start of my favorite time of year. The last two months of the year are my favorite because there’s so much to look forward to. Thanksgiving dinner with family, Friendsgiving with friends, Hallmark Christmas movies, and then of course, all things Christmas.

So be prepared to see more fall baking, fall cocktails, and so much more food for celebrating. Even though the holidays won’t be the same, we’re going to make the best of things.

Today, we’re starting with this apple cider gimlet.

I’m generally not much of an alcohol drinker. But I do love an occasion cocktail especially when you’re out socializing with friends or celebrating a special occasion. And when it comes to seasonal drinks? I’m very likely to pick those because it feels extra special.

So to celebrate the start of the holiday season and my favorite time of year? We’re making these apple cider gimlets. It’s sweet and bubbly and tastes like fall.

In a small or medium sized glass, add gin, lime juice, simple syrup, apple cider, and crushed ice. Stir or shake until combined. Top the glass with a splash of club soda for some fizziness and more crushed ice.

I used just one ounce gin for my cocktail because I prefer less alcohol, but you can add another ounce if you prefer more alcohol in your cocktail.

To make the simple syrup, just heat together 1/4 cup sugar and 1/4 cup water until the sugar has completely melted. You won’t need all of the simply syrup, but you can keep it for other cocktails and mocktails.

Serve the apple cider gimlet cold with a cinnamon stick.

Enjoy!
