What did you do to celebrate the start of the new year? Or what will you be doing to celebrate the new year?

We had a relatively low key New Year’s Eve. I met up with a friend for lunch to catch up. Life has been so busy for the both of us lately that we haven’t had a chance to catch up over a meal. My boyfriend and I baked cookies to give as a gift to his parents. Celebrated a friend’s birthday with a crab dinner. Because I mean, what’s a better way to celebrate than with a crab dinner, right? And then we just kind of hung out with friends afterwards.

But it’s New Year’s Day, and there’s no better excuse to celebrate than a new year, and a new decade, right? So I thought I would share with you these pineapple orange mimosas. You know, to start your day off with some bubbly drinks.

I think at this point, you guys already know I have an obsession with brunch. Unfortunately because of my work schedule, brunch isn’t always something I can do. So whenever I get the chance, I want to enjoy it and savor every little moment. And nothing goes better with brunch than a glass of mimosa.

I love that mimosas can be customized to your taste. Any flavor you want, any juice you want, you can add to champagne and make it into a mimosa. This version is super refreshing.

This breakfast cocktail is perfect for the holidays and for welcoming in the new year. And if you have a little bit of champagne left over and juice on hand, mimosas are always the route to go.

Mix together pineapple juice and orange juice until combined. Top with sparkling champagne or club soda for a non-alcoholic version. Add crushed ice, slice of fresh cut orange, and mint leaves.

Serve the pineapple orange mimosas cold.

Ingredients
  • 1 cup pineapple juice
  • ½ cup orange juice
  • 1 cup champagne or club soda
  • crushed ice
  • mint for garnish
  • slices of oranges for garnish
Directions:
  1. Mix together pineapple juice and orange juice until combined. Top with sparkling champagne or club soda for a non-alcoholic version. Add crushed ice, slice of fresh cut orange, and mint leaves.
  2. Serve the pineapple orange mimosas cold.
