The last few days of August! And I’m savoring every last moment. But at the same time, I’m excited that Labor Day weekend is just a few days away. Do you have any plans for the long weekend?

In the mean time, with all the warm days that we’ve been having, for the most part anyways, I thought we could use this watermelon mint lemonade. Frozen watermelon, lemon juice, and mint simple syrup. The flavors are so refreshing and so on point. It’s super easy to make so it’s perfect for summer days.

Watermelon Mint Lemonade | Cooking with a Wallflower

Place cubed watermelons in a freezable bag or container in the freezer for several hours or overnight until they are frozen. I like to keep cubed watermelon in the freezer just in case I need them for anything.

In a small pot, add water, mint leaves, and granulated sugar. Cook over low heat for about 5 minutes. Remove the pot from heat and let the mint leaves steep for several minutes. The longer the mint leaves steep, the stronger the flavor. Remove the mint leaves and set the mint simple syrup aside for now.

Add frozen cubed watermelon into a food processor or a high speed blender. Add water, lemon juice, and mint simple syrup. Blend until the watermelon becomes a frozen slushie consistency.

Serve the watermelon mint lemonade cold immediately.

Ingredients
Mint Simple Syrup
  • ¼ cup granulated sugar
  • ¼ cup water
  • ¼ cup mint
Watermelon Lemonade
  • 2 cups frozen cubed watermelon
  • ¾ cup water
  • Juice of two lemons
Directions:
  1. Place cubed watermelons in a freezable bag or container in the freezer for several hours or overnight until they are frozen. I like to keep cubed watermelon in the freezer just in case I need them for anything.
