Description
Soba noodles tossed with shredded chicken and broccoli then drizzled with peanut sauce. These chicken broccoli soba noodles with peanut sauce is the perfect weeknight dinner.
Ingredients
2 bundles of soba noodle
1 tablespoon olive oil
2 cloves of garlic
2 cups broccoli florets
1 cup cooked shredded chicken
Pinch of salt
Peanut Sauce
1/2 cup creamy peanut butter
2 tablespoons rice vinegar
1 tablespoon granulated sugar
1 teaspoon soy sauce
1/4 cup + 2 tablespoons water, more if needed for thinning
1 teaspoon crushed red pepper
2 cloves of garlic, finely minced
Instructions
In a medium sized pot, cook 2 bundles of soba noodles in boiling water for about 5-6 minutes until the noodles are al dente. Once the noodles are cooked to your liking, drain them and run them through cold water to stop the cooking process and to prevent them from sticking to each other.
In a large skillet, add olive oil over medium to low heat. Once the olive oil has heated, add minced garlic. Cook until the garlic becomes golden brown and aromatic, about a minute. Next, add the broccoli florets. Cook the broccoli for several minutes until tender. Toss in shredded chicken, and cook until warmed, then remove from heat. Season lightly with a pinch of salt.
Add the soba noodle to the skillet, and toss until combined.
In a small bowl, whisk together peanut butter, rice vinegar, granulated sugar, soy sauce, water, crushed red pepper, and finely minced garlic until well combined. If the peanut sauce is too thick for your liking, add more water to thin out the sauce.
Drizzle the creamy peanut sauce over the chicken broccoli soba noodle as you eat.
