With June only a few days away, the official start of summer is now just around the corner!

And with hot summer days in our future, for some of us anyways, I’m ready for quick and easy dinners that make standing in the kitchen so much more bearable.

Today, I wanted to share with you this delicious sesame shrimp vegetable soba noodle that’s perfect for a summer weeknight dinner. Soba noodles, or Japanese buckwheat noodles, are tossed with red bell peppers, mushrooms, zucchini, and then flavored with a tasty sesame sauce. It’s one of my favorite dishes right now.

Some days I’m seriously craving for classic Asian dishes, but Asian dishes often require so many ingredients to get that unique delicious flavor. Luckily, I just discovered the NEW P.F. Chang’s® Home Menu sauces, which make cooking Asian cuisine so much easier. They come in three flavors: teriyaki, kung pao, and sesame. These P.F. Chang’s® sauces are brand new and currently can only found at Walmart in the Asian food aisle.

For this soba noodle dish, I used the P.F. Chang’s® Sesame sauce, which is perfect for dips, marinades, or sauce. It’s the simple secret to exordinary flavor. I love that with bottle of sauce, I can get dinner ready in just about 20 minutes. Asian cuisine made simple. Yes! These soba noodles are tossed with vegetables and shrimp, and topped with almonds for an extra crunch. But you can always substitute the almonds with peanuts or cashews or any favorite nut.

To make this dish, cook the soba noodles according to the directions on the package. Cook them like you would cook pasta noodles until al dente. Once the noodles are done, drain the water and run them through cold water to prevent them from continuing to cook and to prevent them from sticking to each other. Set the noodles aside for now.

In a large skillet, add a little bit of olive oil over low to medium heat. Once the olive oil has heated, add diced red bell peppers, sliced mushrooms, and sliced zucchinis with half of the sesame sauce. Cook the vegetables for about 2-3 minutes until they become tender.

Next, add the shrimp and cook for an additional 2-3 minutes until the shrimp are cooked through and no longer appear gray.

Once the shrimp are cooked, remove the skillet from heat, and add the soba noodles and the rest of the sesame sauce. Toss to evenly incorporate and distribute all the ingredients and the sauce.

Serve the Sesame Shrimp Vegetable Soba Noodle topped with roughly chopped almonds, a pinch of crushed red peppers (for a spicy kick), and fresh basil leaves for garnish.

Ingredients
  • 2 bundles of soba noodles
  • 1½ tablespoons vegetable oil
  • 1 medium zucchini, sliced
  • 1 small red bell pepper, diced
  • 5-6 medium shiitake mushrooms (or white mushrooms), sliced
  • A dozen large shrimp
  • ½ cup P.F. Chang's® Sesame Sauce
  • 2 tablespoons water
  • pinch of crushed red pepper
  • basil for garnish
  • chopped almonds for topping

    Wow, looks delicious and not that hard to make. I bookmarked this because I have all the ingredients at home and we are craving noodles and shrimps. Do u think it’s alright to change soba with any other kind of noodle?
