I’m not a sports person so I don’t usually watch sports unless it’s like the most important game of the season, the last one. But when it comes to the Olympics, I’m so obsessed with watching the swimming and the gymnastics. It’s so dramatic in a nail biting kind of way. I’m constantly hiding my face behind my hands and peeking through my fingers. I seriously can’t stand the suspense, and yet I can’t resist watching.

It’s been a few very unproductive days because I’m just sitting there watching the games.

Anyways, let’s talk salads.

Summer is all about the fresh produce. But the best part for me? Stone fruits.

Peaches, nectarines, cherries, apricots, plums, pluots, which is your favorite pick?

Does it even matter? Because I’m using almost all of them in this salad!

As you know, I love my food in different colors, textures, and flavors, especially when it’s a salad. The more loaded my salad is, the better.

This stone fruit salad is filled with mixed greens, peaches, nectarines, plums, apricots, cherries, heirloom tomatoes, walnut, and fresh basil. Drizzle poppy seed dressing on top, and then served with a slice of crusty bread.

The best of summer in a bowl.

You’ll have to hurry though, while these stone fruits are still at its peak. And you can definitely add your own favorites to the mix too!

Prepare all the fruits.

Toss the sliced fruits with the mixed greens, fresh basil leaves, sliced heirloom tomatoes, chopped walnuts, then drizzle with your favorite dressing. I used poppy seed dressing. Serve with a slice of crusty bread for a little bit of carb.

Serves: 1-2 servings
Ingredients
  • 2 cups mixed greens
  • 6-7 cherries, quartered
  • 1 large peach/nectarine, sliced
  • 2 apricots, sliced
  • 1 medium plum/pluot, sliced
  • 1 medium tomato, sliced
  • a handful of basil leaves
  • 2 tablespoons chopped walnuts
  • poppy seed dressing, or dressing of choice
  • Slice of bread for serving (optional)
Directions:
  1. Prepare all the fruits.
  2. Toss the sliced fruits with the mixed greens, fresh basil leaves, sliced heirloom tomatoes, chopped walnuts, then drizzle with your favorite dressing.
