Happy November!

I should have waited another day to post, but I’m way too excited for the start of November!

There are so many things to look forward to: fall foliage (there is zilch in San Francisco!), more pumpkin in everything, roasted butternut squash (my fave!), turkey (which I really only get to eat once a year!), Black Friday shopping, and Christmas movies!

Um…. Yes. I’m not at all embarrassed to admit that I’m obsessed with Christmas movies. I don’t care how cheesy some of these movies can be. I love watching them for those warm fuzzy feelings and the happily-ever-afters. If I could, I’d curl up with a mug of hot chocolate, wrap myself in a warm blanket, and binge watch Hallmark Channel Christmas movies and ABC Family’s 25 Days of Christmas movies with my sisters all day long. We do this every single year. I’ve even studied for finals with a Christmas movie playing in the background.

Now, before I continue to ramble about all things fall, let’s talk Pumpkin Pie Smoothies.

Technically, this is a play on the popular Pumpkin Spice Lattes, but I have a love hate relationship with coffee. I love the taste of coffee, and they’re great for a boost of energy while I studied for midterms and finals in school, but normally? The boost of caffeine gives me a major headache. Two or three sips and I can already feel the effects. So I try to avoid coffee, at least, strong ones.

This pumpkin pie smoothie is absolutely delicious. With actual pumpkin puree and a bit of pumpkin spice blended with vanilla almond milk, it tastes like pumpkin pie. You also need to add a frozen banana because frozen bananas help make drinks thick and creamy.

To make this smoothie, all you have to do is add pumpkin puree, pumpkin pie spice, vanilla almond milk, and ½ – ¾ of a banana to a blender and blend the ingredients until they become thick, creamy, and smooth. Too much banana could overpower the taste of pumpkin.

Ingredients
  • ½ cup vanilla almond milk (or almond milk)
  • 3 tablespoons pumpkin puree
  • ¼ teaspoon pumpkin pie spice
  • 1 medium sized frozen banana (or ¾ of a large banana)
Directions:
  1. Add all the ingredients into a blender, and blend until the beverage becomes smooth and creamy.
  2. Serve the beverage cold.
