Zucchini and Squash Blossom Salad

I am a total San Franciscan girl. I was born, raised, and currently living in the city by the bay. I’m used to the cool, overcast, and often foggy weather. So when I’m in a city where the temperature is over 90 degrees? I feel like I’m about to melt.

These last few days I’ve been pre-vacationing in the South Bay, where the weather is the complete opposite of San Francisco, hot and humid. I want icy cold drinks. I want something cold and refreshing to eat. Nothing warm or anything that requires much cooking because the stove makes the kitchen too hot.

My solution? A simple salad. Julienned zucchini combined with sweet grape tomatoes and shredded squash blossoms for a healthy and refreshing summer salad. Just a few ingredients, but so flavorful. Drizzle your favorite dressing over the salad, and you have dinner ready in about 10 minutes at most.

First, julienne a large zucchini using either a grater or with a knife. I recommend making a spiralizer. That way the zucchini isn’t cut too thin.

Slice the grape tomatoes into fourths. I used a variety of grape and cherry tomatoes to add more flavor to the salad.

Shred the squash blossoms by tearing them into smaller pieces.

Toss the salad until the ingredients are evenly combined.

Drizzle your favorite dressing over the salad.

Serve the salad cold. Enjoy!

Ingredients

1 large zucchini, julienned

4-5 squash blossoms, shredded

½ cup grape or cherry tomatoes, sliced

Dressing of choice to taste

Directions

Cut one large zucchini into matchsticks. Tear up the squash blossoms. Slice the grape tomatoes into fourths.

Combine all the ingredients into a large bowl. Toss them together to evenly incorporate the ingredients.

Drizzle dressing of choice over the salad, to taste.

Serve the salad cold.

    Andrea, this looks beautiful and healthful. I have never heard of a squash blossom though and not sure where to find it. Is there a substitute you might recommend?
