Crunchy Honey Almond Granola

Crunchy oats and sliced almonds sweetened with a little bit of honey and sugar and a hint of vanilla. This granola would make the perfect snack or a great addition to yogurt parfaits and cereal.

I don’t think I can ever be tired of granola. I used to always carry Nature Valley’s Oats N Honey crunchy granola bars everywhere with me in case I needed something to stave off the hunger pangs. I’m not too ashamed to admit that I get grouchy when I’m hungry. I’m also not too ashamed, though a little embarrassed (just a little) to say that I used to shake my cereal box to find the granola clusters to eat first.

Shh… Don’t tell my sisters. They’ve always wondered why our cereal boxes had so little granola clusters. Lol

Of course, wouldn’t it be great to have as much granola as I want in my cereal? Or just to snack on? Or in my Strawberry Lychee Yogurt Parfait? Or maybe with Strawberry Banana Smoothie Topped with Fresh Bananas and Granola? So many options!

Nature Valley has come out with bags of just granola clusters, except they’re relatively pricy. So I thought I’d try my hand at making my own. That way, one, I can have them as much as I want; two, I can control what goes into my granolas; and three, they’re inexpensive. What more can I ask for?

Making granola is very simple.

Preheat the oven to 300oF. Line an 8×8 inch baking pan with foil and lightly grease with vegetable oil or with cooking oil spray. Don’t forget this step because otherwise, the granola will stick to the foil.

Then, mix the granola and the slices of almond together in a medium sized bowl. Note the color of the old fashioned oats and the almond. They’re pale in color.

Next, add in the vanilla extract, honey, and sugar. Mix until the ingredients are evenly incorporated.

If you want the granola to form clusters, add about a tablespoon or two more honey and mix until they begin to clump together. I liked mine in smaller clusters so I didn’t need as much honey.

Pour the oats and almond mixture onto the baking pan. Bake the oats and almond mixture at 300oF for about 45-50 minutes until they turn a golden brown color. Every oven is different. So around 40 minutes, start to check the granola. As soon as the oats and almonds turn golden brown, you want to remove it from the oven. Otherwise, they could become burnt.

Burnt granola does not taste good. Believe me.

Remove the granola from the oven and allow it to cool.

Serve as a snack or with cereal or yogurt parfait.
