Warm fluffy pancakes filled with fresh strawberries and bananas, a delicious breakfast to start the weekend.
Pancakes filled with fresh strawberries and bananas in every bite and drizzled with maple syrup. Can you think of a better way to start the weekend than with delicious pancakes? Strawberry banana is one of my favorite combination ever! As you probably noticed from my previous recipes. =) My mouth is watering just thinking about them. These pancakes are simple to make so you’ll have breakfast ready in no time.
First, chop up all your fruits. I recommend trying the fruits, especially the strawberries. Some of mine were sour….
In a medium size bowl, add flour, baking powder, and sugar. Mix until combined, and then set aside.
Crack an egg into another medium size bowl and beat it. Then add milk and vanilla extract. Whisk until they are mixed.
Slowly add the dry ingredients into the wet ingredients, mixing as you go. If the batter is too dry, you can add an extra tablespoon of milk.
Gently mix in the strawberries and bananas. You want to combine the fruits with the batter but not mash them, especially the bananas since they are easily mashed. I like adding the fruits into the batter so that it’s evenly mixed. You can add more on top later.
Spray cooking oil spray to lightly grease the skillet over low to medium heat. Wait about 30 seconds to 1 minute for it to warm up. Using a ¼ cup measuring cup, scoop up the pancake batter and gently pour it into the skillet. Try to keep the batter in a circle to make it look more like a pancake, but if it’s a little lopsided, who cares? It’ll still taste just as great! I made about two at a time, but that can get a little messy. There are days when I can multitask, and there are days when I really, really can’t. It’s up to you how many you want to make at a time.
Allow the pancakes to cook until the side faced down has turned a golden brown, about 2-3 minutes. I checked by slipping my spatula underneath to lift it up to look. Once you can place your entire spatula underneath, the pancake is ready to be flipped. You can try to use just one spatula to flip the pancakes or you can use two. Just remember that it takes time to get it perfect. And believe me, even then, they’re not. One side is always better than the other.
You can see that some of my pancakes don’t look as tasty, but they still taste delicious!
Cook the other side for another 2-3 minutes until it’s golden brown. Repeat with the rest of the batter.
Plate the pancakes and serve with extra fruit on top and maple syrup.
