Caprese Avocado Toast

Avocado toast topped with sliced tomatoes, basil, and fresh mozzarella then drizzled with olive oil. This caprese avocado toast is refreshing and delicious, perfect for spring.
Ingredients
  • 4 thick slices of toast
  • 1 large avocado, thinly sliced
  • 2 oz mozzarella, chopped into bite size
  • 8 grape or cherry tomatoes, cut into quarters
  • 1 sprig of basil, roughly torn
  • 2-3 teaspoons olive oil
  • Pinch of salt
  • 1 tablespoon balsamic vinegar (optional)
Directions:
  1. First, cut the bread into thick slices and toast them until lightly browned on both sides.
  2. Cut a large avocado into thin slices and remove the skin. Divide the avocado slices between the four slices of toast.
  3. Cut the grape and cherry tomatoes into quarters, cut the fresh mozzarella into bite size pieces, and roughly tear up the basil leaves. Divide all the ingredients among the four toasts.
  4. Drizzle olive oil over the toasts.
  5. Sprinkle a pinch of salt over each of the toast.
  6. If you like, you can drizzle your favorite balsamic vinegar over your toast too.
  7. Serve the caprese avocado toast fresh.
