Sweet and Sour Shrimp

Shrimp with pineapple chunks, sliced onions, diced jalapenos, and chopped green peppers in a sweet and sour sauce, then served with a multigrain medley. This sweet and sour shrimp is the perfect dish to serve for Chinese New Year.
Ingredients
For the Sweet and Sour Shrimp
  • 1 tablespoon olive oil
  • 1 cup sliced onions
  • 1 cup chopped green bell pepper
  • 2 tablespoons diced jalapenos
  • 8 ounce Dole Pineapple Chunks
  • 1 pound shrimp, deshelled and deveined
  • ⅓ cup Kikkoman sweet and sour sauce
  • 2 ½ teaspoons soy sauce
For the Minute® Multi-Grain Medley
  • 1 package of Minute® Multi-Grain Medley
  • 1 cup water
Directions:
Sweet and Sour Shrimp
  1. First, add olive oil to a medium sized pan over medium heat.
  2. Once the olive oil has heated for about a minute, add onions, green peppers, and jalapenos to the pan. Stir the ingredients using a spatula to cook them evenly. Cook the ingredients until they have softened.
  3. Add shrimp and pineapples to the pan. Cook the shrimp until they’ve turned a reddish orange color.
  4. Add the sweet and sour sauce and the soy sauce.
  5. Stir to coat all the ingredients with the sauce. Remove the pan from heat.
Minute® Multi-Grain Medley
  1. In a separate pot, add one package of the Minute® rice and one cup of water. Allow the water to come to a boil, then turn the heat down to a simmer and cover. Cook the rice for 10 minutes.
  2. Serve the sweet and sour shrimp with the rice.
