Spicy Honey Chipotle Shrimp Avocado Croissant Melts

Open faced croissant melts topped with fresh avocado and jumbo honey chipotle shrimp. These spicy honey chipotle shrimp avocado croissants melts are so delicious and addictive!
Ingredients
  • 1 dozen jumbo shrimp or prawns, deshelled and deveined
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 tablespoon adobo sauce from the can
  • 1 tablespoon honey
  • ¼ teaspoon chile pepper
  • ⅛ teaspoon salt
  • 2 or 4 croissants (open faced or sandwich)
  • Shredded mozzarella cheese
  • 2 medium sized avocado, thinly sliced
  • Shredded parmesan cheese
  • Chopped parsley for garnish
Directions:
  1. In a medium sized bowl, add jumbo shrimp, chipotle peppers, adobo sauce, honey, chile powder, and salt. Mix until all the shrimp are coated in the sauce. Let sit for about 5 minutes.
  2. Add olive oil to a small skillet, then add the marinated shrimp. Cook the shrimp for about 5 minutes or so until they are no longer gray and translucent.
  3. Cut croissants in half. Sprinkle mozzarella cheese on top and heat up in the oven for a few minutes until the cheese has melted and the croissant is crisp on the edges.
  4. Place thinly sliced avocado on the croissant melts. Sprinkle a pinch of salt on each of the croissant halves. Then place the honey chipotle shrimp on top.
  5. Garnish the spicy honey chipotle shrimp avocado croissant melts with shredded parmesan cheese and finely chopped parsley, and serve warm. If you need to pack these for an on the go meal, just turn these croissant melts into sandwiches.
