Ingredients
  • 1¼ cups all purpose flour
  • ½ teaspoon baking soda
  • ½ cup unsalted butter at room temperature
  • ½ cup brown sugar
  • 2 tablespoons granulated sugar
  • 1 large egg, room temperature
  • ¾ cup cookie butter
  • 1 teaspoon vanilla extract
  • ½ - ¾ cup candy cane caramels
Directions:
  1. Preheat the oven to 350F. Line a baking sheet with parchment paper or silcone mat. Set aside for now.
  2. In a small bowl, whisk all purpose flour and baking soda together. Set aside for now.
  3. In a medium size bowl, beat together unsalted butter, brown sugar, and granulated sugar until creamy and smooth. Next, add an egg and vanilla extact, and beat until combined.
  4. Add the dry ingredients to the wet ingredients and mix until well combined. Then fold in the candy cane caramels.
  5. Refrigerate the cookie dough for about half an hour or more. When the butter is too soft, it will spread on the baking sheet.

If you like, you can press candy cane caramels into the cookie dough so that they appear on top. Bake for about 10 minutes until the edges are browned. Allow the cookies to cool for several minutes before transferring to a wire rack to completely cool. Repeeat with a second batch of cookies.
