Leftover Turkey Vegetable Chili

Smoky chipotle chili filled with leftover turkey and vegetables. This spicy leftover turkey vegetable chili is delicious and the perfect dish for after Thanksgiving.
Ingredients
  • 2 tablespoons olive oil
  • 4 cloves of garlic, minced
  • ½ yellow onion, sliced
  • 1 medium carrot, chopped
  • 1 ½ cup corn kernels, frozen, canned, or fresh
  • 2 cups turkey or chicken broth
  • 1 15oz can kidney beans or black beans
  • 1 7oz can chipotle peppers with adobo sauce, more to taste
  • 3 tablespoons adobo sauce from can of chipotle peppers, more to taste
  • 1 tablespoon granulated sugar
  • 1 14oz diced tomatoes
  • 1 6oz tomato paste
  • 1 ½ teaspoon oregano
  • ⅛ teaspoon allspice
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 2 cups shredded turkey or chicken
Directions:
  1. In a medium or large pot, add olive oil over low to medium heat. Allow the olive oil to heat for about a minute before adding minced garlic and diced onions. Cook the garlic and onions until they have softened, about two minutes.
  2. Next, add the carrots and a splash of broth as needed to prevent the vegetables from burning at the bottom of the pot. Cook the carrots for about 5-7 minutes until they become tender.
  3. Then add the mushrooms, green beans, kidney beans, and corn. Cook for a few more minutes. Pour in the rest of the broth, diced tomatoes, tomato paste, granulated sugar, and add chipotle peppers and adobo sauce. This version is spicy. Add more or less chipotle peppers to taste. Next, add the seasonings for flavor.
  4. Use a spatula to stir to incorporate all the ingredients and allow it to simmer for 15-20 minutes until all the vegetables are tender. When ready to serve, add the shredded turkey.
  5. Serve the leftover turkey vegetable chili warm with bread or crackers.
Notes
**This version of chili is made to be spicy. If you prefer yours to be less spicy, add less of the chipotle peppers.
