Mocha Chocolate Chip Cookie Bars

Cookie bars filled with chocolate chips and a hint of mocha. These mocha chocolate chip cookie bars are easy to make and so delicious.
Ingredients
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 4 teaspoons espresso powder
  • ¼ teaspoon salt
  • 1 cup butter at room temperature
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg + 1 yolk, beaten
  • 1½ tablespoons vanilla extract
  • 1 cup semi sweet chocolate chips\
  • Ice Cream (optional)
Directions:
  1. Preheat the oven to 350F. Lightly grease a 13x9 inch baking pan with nonstick cooking spray. Set aside for now.
  2. In a large mixing bowl, mix all purpose flour, baking powder, salt, and espresso powder until well combined. Set aside for now.
  3. In a medium mixing bowl, cream together butter, brown sugar, granulated sugar, a large egg + yolk, and vanilla extract until smooth.
  4. Pour the wet ingredient into the dry ingredient, and mix until combined.
  5. Fold the chocolate chips into the cookie dough, but reserve some chocolate chips to sprinkle on top later.
  6. Spread the mocha chocolate chip cookie dough evenly in the prepared baking pan. Sprinkle the reserved chocolate chips on top.
  7. Bake in the oven for 23-25 minutes. Remove the baking pan from the oven. Insert a toothpick into the cookie. If the toothpick comes out clean, the cookie is done. Allow the mocha chocolate chip cookie to cool down for several minutes before cutting into it.
  8. Slice the mocha chocolate chip cookie into 20-24 bars.
  9. Serve the mocha chocolate chip cookie bars warm and with a scoop of ice cream if desired.
