Winter Vegetable Soup

A warm comforting soup filled with onions, garlic, carrots, parsnips, chards, and carrot greens. This winter vegetable soup is easy to make using ingredients found at the farmer’s market and a great way to stay warm on cold winter days.
Ingredients
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 small onion, diced
  • 2-3 carrots + optional carrot top greens, chopped
  • 3 cups vegetable broth
  • 2-3 Swiss chards, chopped
  • 1 medium parsnip, chopped
  • 1 sprig fresh thyme
  • salt to taste
Directions:
  1. In a medium sized pot, add olive oil and allow it to heat for a minute. Then add minced garlic and diced onions. Allow the garlic and onions to cook for a few minutes until softened and aromatic.
  2. Add chopped carrots and parsnips to the pot, and cook them for several minutes.
  3. Pour the vegetable broth into the pot. Then add chopped chards, carrot greens, and fresh thyme. Allow the soup to simmer until the vegetables are tender. Season the soup with salt to taste.
  4. Serve the soup warm.
