I can’t believe another week has gone by! I’m still trying to get used to writing 2018! But I’m so excited because in less than two weeks, we’re headed to Las Vegas for my cousin’s bachelorette party. An entire weekend full of food, spa, and clubbing. I might be more excited about the food. We have reservations for Gordon Ramsay Steak. Although if we had known that Hell’s Kitchen is now open, we would have attempted to make reservations there instead. Is anyone else as obsessed with all things Gordon Ramsay as we are? lol

In the mean time, let’s talk about this chicken broccoli soba noodle with peanut sauce.

I feel like it’s been awhile since I’ve posted a recipe with soba noodle, which honestly, is one of my favorite types of noodles. So we have to remedy that. It’s time to add soba noodle back onto our list of weekday meals. Cuz I’m all about the dishes that are no fuss and little mess.

I wanted to keep this dish as simple as possible. Just a few simple ingredients that you might already have on hand: soba noodle, broccoli, and chicken. And of course, the creamiest of creamy garlicky peanut sauce. It’s my favorite.

Whenever I go out for Thai food, I always want to order something that has peanut sauce. It’s creamy, it’s savory, and it’s seriously addictive. It’s great as a dipping sauce for practically everything, and it’s great as a sauce for your dishes. I like to drizzle them over my soba noodles instead of tossing the noodles in the sauce. Otherwise, the noodles absorb all of the sauce and you’ll constantly have to add sauce to your dish. Which isn’t a problem per say, until you realize you ate like half a cup of peanut butter by yourself.

In a medium sized pot, cook 2 bundles of soba noodles in boiling water for about 5-6 minutes until the noodles are al dente. Once the noodles are cooked to your liking, drain them and run them through cold water to stop the cooking process and to prevent them from sticking to each other.

In a large skillet, add olive oil over medium to low heat. Once the olive oil has heated, add minced garlic. Cook until the garlic becomes golden brown and aromatic, about a minute. Next, add the broccoli florets. Cook the broccoli for several minutes until tender. Toss in shredded chicken, and cook until warmed, then remove from heat. Season lightly with a pinch of salt.

Add the soba noodle to the skillet, and toss until combined.

In a small bowl, whisk together peanut butter, rice vinegar, granulated sugar, soy sauce, water, crushed red pepper, and finely minced garlic until well combined. If the peanut sauce is too thick for your liking, add more water to thin out the sauce.

Drizzle the creamy peanut sauce over the chicken broccoli soba noodle as you eat.

Serve the chicken broccoli soba noodle with peanut sauce warm or cold to your liking.

Ingredients

2 bundles of soba noodle

Peanut Sauce

1/2 cup creamy peanut butter

2 tablespoons rice vinegar

1 tablespoon granulated sugar

1 teaspoon soy sauce

1/4 cup + 2 tablespoons water, more if needed for thinning

1 teaspoon crushed red pepper

    I have no idea what soba noodles are, and I’ve never made peanut sauce, but when I lived in Liberia a favorite was peanut “soup” — chicken and peppers in a peanut sauce that was served over rice. I loved it, so I’m going to give this a try. It sounds wonderful.

    I’ve only made soba noodles once, and failed miserably somehow. This post and recipe kindof makes me wanna have a go at it again haha, *crossing my fingers* Great post girl !
