I had the most relaxing several days ever, and I’m so grateful to be able to relax and recharge. That is, if you subtract all the hecticness that revolved around cooking for Thanksgiving. I always look forward to Thanksgiving though. Delicious food, fun time with the family, marathons of Hallmark Christmas movies. What’s not to love?

But as much as I love eating all the dishes we make for Thanksgiving, I love eating the leftovers so much more as you can probably see from my previous few posts. But now, my almost week long holiday vacation is over, and I have to fall back into routine.

And it’s so difficult!

So I’m thinking I need a cup of this pumpkin maple almond oatmeal latte to get me through this week. I sometimes have leftover pumpkin puree from making desserts so all that leftover puree can go right into this warm cup of coziness.

Just picture pumpkin and maple in every bite of this oatmeal latte. Plus, it’s both your morning caffeine and your breakfast all in one. What better wat to start your day, right?

To make this oatmeal latte, heat almond milk, pumpkin puree, maple syrup, vanilla extract, ground cinnamon and old fashioned oats over low to medium heat for about 5 minutes are so. You’ll notice that the oats have thickened.

Pour the oatmeal into a cup and stir with a fork to create the foaminess on top. Then pour the strong brewed coffee over the oatmeal. You’ll want to eat this oatmeal latte with a spoon. =)

    The idea of adding Oats to a Latte scares me… But it sounds oddly appealing! Then again, if you throw Pumpkin into anything, I’m pretty much down 😀
