It’s already the second day of October, and it’s starting to feel like fall is coming. Just a couple more weeks until knee high boots, comfy sweaters, and warm blanket scarves. I can’t wait until I see the leaves on the trees change colors and the ground covered in all shades of reds and oranges. And maybe some pumpkin picking too. Then of course, there’s all the food. Apple ciders, apple pie, pumpkin pie, salted caramel lattes.

Today, I wanted to share with you another toast recipe. I had this amazing toast not too long ago at a cafe downtown, and I really wanted to try to replicate it at home.

So this is my version of the toast I had awhile ago.

What I love most about this tomato basil burrata toast is that it’s so flavorful. Pesto on bread topped with creamy burrata, fresh tomatoes, tender basil leaves, and crunchy bread crumbs. Seriously, every bite is so delicious and perfect for a snack or a light meal. I can probably live off this toast. Or this honey fig burrata toast.

Start with heating up thick toast. Once the toast is warm, spread pesto over it. Top with burrata and fresh sliced tomatoes. You can use either cherry or grape tomatoes.

Garnish the toast with bread crumbs and small basil leaves.

To make the bread crumbs, preheat the toaster oven to 425F. Line a baking sheet or baking pan with aluminum foil and lightly grease with olive oil or nonstick cooking spray. Cut day old bread into cubes. Toss the bread with olive oil and a little bit of salt. Toast the bread for about 10 minutes until browned. Crush the croutons into crumbs and sprinkle it on top of the toast.

Serve the tomato basil burrata toast warm.

Ingredients
  • 2 thick slices of bread
  • 2 tablespoons pesto
  • 2-4 ounces burrata
  • 1 cup cherry tomatoes, sliced
  • small basil leaves
Bread crumbs
  • ½ cup cubes of day old bread
  • 1 tablespoon olive oil
  • salt and pepper
Directions:
