With summer coming to an end, and fall just around the corner, I feel like life has been so hectic lately. I’ve been going to bachelorette parties, bridal showers, birthday parties, weddings, and baby showers practically every weekend.

It’s so much harder to find time to cook your meals when your schedule is super tight. So I like dishes that are simple to make with very little to prep. A big bonus if they’re healthy, too. Lately, I’ve been obsessed with poke bowls. Partly because they’re easy to make, partly because they’re customizable, and partly because it’s the perfect healthy meal for those days when you have no time to cook.

For this version of poke bowl, I used Bumble Bee® Seasoned Tuna Pouch with Spoon. These Seasoned Tuna Pouches are so convenient and perfect for when you’re trying to eat better. They’re in individual serving pouches and are great for snacking on the go. You can enjoy it straight from the pouch, especially since a spoon is included. But if you have a little more time, you can fancy them up into a delicious weeknight dinner or lunch for the next day. Plus, there are so many flavors to choose from. For this recipe, I used the spicy Thai chili tuna, but the Sriracha flavor or the Sesame & Ginger flavor would be amazing too.

The flavor of tuna is amazing. It’s spicy, slightly sweet, and also savory. There’s no need to add additional seasoning. Served with rice, thinly sliced cucumbers, edamame, avocado, and fresh corn kernels, this Spicy Thai Chili Tuna Poke Bowl is delicious and perfect for a weeknight dinner. Other ingredients you can use for your poke bowl can include seaweed salad, radishes, and black sesame seeds.

In two medium sized bowls, divide the rice, thinly sliced cucumber, edamame, corn, and diced avocado, and then add the spicy Thai chili tuna. Season the rice with furikake rice seasoning.

Serve the spicy Thai chili tuna poke bowl warm or cold.

Ingredients
  • 1 cup cooked rice, divided

  • 1 small cucumber, sliced
  • 1 medium avocado, diced
  • ½ cup cooked corn kernels
  • ½ cup edamame
  • Furikake rice seasoning
Other possible ingredients
  • Sliced radishes
  • Seaweed salad
  • Seaweed
Directions:
