I can’t believe it’s raining again! I know I live in SF, and I know that our summer technically isn’t until September and October, but still! I was enjoying the nice warmish weather while it was here. And I am sooo not ready for the overcast skies and cold fog.

But let’s talk about this peach caprese salad. It’s colorful, it’s fresh, and it’s soo deliciously flavorful.

I feel like today is a peach caprese salad kind of day. Because it’s summer, and peaches are in season, and I really don’t want to cook. It’s perfect for those days when you have ripe peaches sitting around, heirloom tomatoes waiting to be eaten, and fresh basil growing in a glass jar you use as a makeshift pot. It’s also perfect for those hot summer days where you don’t want to stand in the kitchen with the stove or oven turned on.

I love how much flavor there is in fresh summer fruits and vegetables. All you have to do is lightly season them and your dish is ready. I like to drizzle the heirloom tomatoes with olive oil, add a pinch of salt, and let it marinate for a little bit. The heirloom tomatoes become so juicy and flavorful. Served with peaches, basil, and mozzarella, you have a contrast of fresh flavors.

To make this dish, you only need a few simple ingredients.

Cut the heirloom tomatoes into slices, drizzle with olive oil, and add a sprinkle of salt and pepper. Let the heirloom tomatoes marinate for about 15-20 minutes.

Serve the heirloom tomatoes with sliced yellow peaches, halved cherry tomatoes, fresh basil, and mozzarella cheese.

Ingredients
  • 1 large heirloom tomato, sliced
  • Drizzle of olive oil (about 1 tablespoon)
  • Pinch of salt
  • Pinch of black pepper (optional)
  • 1 medium peach, sliced
  • ½ cup cherry tomatoes, sliced
  • 1 sprig of fresh basil
  • 2 oz fresh mozzarella
