Only a few more days until the weekend!

I’m actually leaving early on Saturday morning to visit my friend for the weekend in the Monterey area. I don’t look forward to waking up super early in the morning to catch my train on the other side of the city, but I do look forward to a weekend getaway. Plus, Monterey and Carmel are supposed to picturesque and have amazing seafood. I’m so ready for the weekend!

But I think I’m going to need a little pick me up to get me through a few more days of work.

And what can be a better pick me up (other than maybe, ice cream or chocolate cake….) than cookies, right? I’ve been obsessed with chewy cookies filled with dried fruits. There are so many combination that you can try!

Using fresh fruit can sometimes make the cookies a little too moist and soft. But if you’re interested and don’t mind extra soft cookies, you might want to try these fresh strawberry cookies.

But some of my favorite dried fruit cookies include these chewy cranberry oatmeal cookies and these wild blueberry pistachio oatmeal cookies. What are some of your favorites?

Wild Blueberry Pistachio Oatmeal Cookies | Cooking with a Wallflower

Whisk flour, baking powder, baking soda, and salt together in a medium sized mixing bowl. Set aside for now.

In a large bowl, cream the butter until soft and creamy. Add brown sugar and granulated sugar, and beat until well incorporated. Next, beat in a large egg and an egg yolk and vanilla extract until combined.

Add the dry ingredients into the wet ingredients, and mix until combined. Fold in the chocolate chips and the chopped dried cherries.

Cover the bowl tightly and refrigerate the cookie dough for about an hour.

When ready to make the cookies, preheat the oven to 350F.

Line a baking sheet with parchment paper or a silcone baking mat. Scoop about 1 1/2 -2 tablespoons of cookie dough and roll into a ball.

Bake the cookies for 10-13 minutes until the edges are lightly brown and crispy. Allow the cookies to cool on the baking sheet for several minutes before transferring the cookies to a cooling rack.

Store the cherry chocolate chip cookies in an airtight container for up to a week.

    Well, I sort of did this. I had to make chocolate chip cookies, so for half the batter I dumped some dried cherries, the other half is “normal.” I’ll let you know how they turn out lol
