We have to talk about these cookie bars!

But first, did you see the Super Bowl? Technically, I didn’t. My dad and my cousin were watching so it was in the background for me while I worked on other things.

But what I was waiting for was Lady Gaga’s halftime performance! Did you see it?! While I know Lady Gaga has been controversial over the years, I love that she doesn’t care what other people think. And her songs are super catchy.

The commercials are always fun to watch too.

Okay, cookies. Let’s face it.

Cookies don’t come out perfect all the time. Sometimes they fall apart, sometimes they’re flat, sometimes they’re hard. I have issues all the time. Me + cookies? Sadness. Even when it’s the most foolproof recipe, somehow I manage to mess it up.

When cookies are in bar form, I don’t have to worry that they’ll fall flat.

One problem solved. Yes!

These green tea chocolate chip cookie bars are lightly sweetened so that the focus is on the matcha flavor. Matcha powder gives the cookies a slightly earthy taste and complements the milk chocolate chips. Plus, you can cut these cookie bars as big or as small as you like. I was torn between 18 or 24 bars. You can decide for yourself =)

Preheat the oven to 350F.

Line a 9x13inch baking pan with aluminum foil with the ends hanging over the sides for easy removal or lightly grease the surface of the baking pan with nonstick cooking spray or olive oil.

In a large sized mixing bowl, whisk together flour, baking powder, salt, and green tea powder.

In medium mixing bowl, Whisk together melted butter and brown sugar. Once combined, whisk in a large whole egg plus an extra yolk, and vanilla extract until combined.

Pour the wet ingredients into the dry ingredients and whisk until combined. Fold in the chocolate chips.

Evenly spread the batter into the baking pan. Bake for 32-35 minutes or until toothpick comes out relatively clean when inserted. Remove the baking pan from the oven and allow the cookie bars to cool before cutting into them. Otherwise, the cookie bars will fall apart.

Store the green tea chocolate chip cookie bars in an airtight container at room temperature or in the fridge for up to a week.

  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 tablespoons green tea powder

    Oo I like this idea! Cookies are always way too sweet but I always crave them and their texture. This would be such a good way to balance it out and haven’t seen it anyway before – can’t wait to try it one day when I casually have some green tea powder in the store cupboard 🙂
