So over the weekend, my family hosted our first barbeque ever. When I say hosted, what I really mean is that it’s the first time we’ve ever had a barbeque at home. It’s a little hard to have one when you don’t own a grill. So we went and borrowed a friend’s grill to make this happen.

I have no idea how to handle a grill. The only grill I’ve ever used is the small indoor ones that need to be plugged into the outlet. So my cousin’s boyfriend did all of the grilling while the rest of us helped with the prepping.

Of course, the day we chose to have the barbeque just happened to be on a day with recording breaking heat temperatures in San Jose. We were dying under that scorching sun, especially when the shadows began to retreat and the sun was directly over our heads.

We had so much food: chicken, ribs, chicken sausage wrapped in bacon, asparagus wrapped in bacon, vegetable skewers, and corn on the cob. Everything was soo good. But as much as I love bacon as the next person, there’s only so much meat I can eat. lol. If you’ve been following my blog for awhile now, you’ll probably notice that I have more vegetables in my recipes than meat. I’m not a vegetarian, obviously, but I do prefer eating more vegetables than meat.

So, here’s another option for those of you who are planning your next barbeque.

Peaches are reaching the end of their season. At least, where I live. If yours are lasting longer, or the season is just about to start, I’m soo jealous!

I loved grilled ripe yellow peaches. They’re so delicious and sweet!

You know those preserved peaches in the cans or in the jars? The ones in the sweet syrup? When you grill ripe peaches, they taste exactly like that. The flavor bursts into your mouth in every bite!

Then you can add mascarpone, or yogurt for a healthy version, into the center, where the pit used to be. Drizzle a little bit of honey over the peaches.

And it’s all ready to be devoured.

I swear, this is the perfect way to balance out all that protein. And it’s the perfect healthy summer dessert.

So try it when you have the chance. =)

Start the grill whether it’s an outdoor one or indoor one. Allow it to warm up.

In the mean time, cut the peaches in half and remove the pits.

Once the grill is hot, place the peaches with the flesh side down.

Grill the peaches for about 5 minutes until the fruit has softened and grill marks start to appear.

Remove the peaches from the grill.

Place a dollop of mascarpone, or yogurt, in the center of the peach.

Then drizzle honey all over.

Serve the peaches warm or cold.

Serves: 6 peach halves
Ingredients
  • 3 peaches, sliced in half and pits removed
  • 4-6 tablespoons mascarpone or yogurt, more to taste
  • 1 ½ - 2 tablespoons honey
Directions:
  1. Heat up the grill for a few minutes.
  2. Place the peach halves on the grill with the flesh side down.
  3. Grill the peaches for about 5 minutes until the peaches soften and grill lines appear. Then remove the peaches from the grill.
  4. Add mascarpone or yogurt to the hollowed out center.
  5. Drizzle honey over the peaches.
  6. Serve the peaches warm or cold.
