Baked Shrimp and Spinach Dip

Warm creamy dip with shrimp and spinach in every bite, this recipe is so delicious it’s simply irresistible. Quick and easy to make with just a few ingredients, this dip will be perfect for parties.

This recipe is definitely a guilty pleasure and an indulgence, but I personally think indulgences are fine as long as they’re in moderation. I separated the dip into 3-4 servings and only placed one serving in the oven for myself. But it’s soo tasty. This recipe reminds me of nacho cheese and spinach dip. It is very addictive and easy to make.

First, in a small pot, boil water and cook the shrimp until it turns from grey to a red orange color and is no longer translucent. Drain the water and allow the shrimp to cool enough to touch.

Using a knife, mince the shrimp. Not all the pieces have to small. The dip can be chunky too. =)

In a small pot, blanch the spinach by boiling it in hot water for about a minute, drain the water out, and then run the spinach through cold water to prevent the spinach from continuing to cook. Allow the spinach to cool enough to touch.

Squeeze out as much water from the spinach as you can. Slice the spinach into small pieces.

Preheat the oven to 350OF.

In a small bowl, mix together cream cheese, mayo, garlic powder, and Creole seasoning.

Add in the minced shrimp and chopped spinach.

Mix the shrimp and spinach until evenly incorporated.

Add in the cheese and combine.

Spoon the dip into 3-4 ramekins or oven safe bowls. I used 6 oz ramekins. Top with mozzarella cheese. This part is optional. I love mozzarella cheese so I wanted to top this dip with it, but you don’t have to. =) It’ll still taste just as good.

Bake in the oven at 350oF for about 8-10 minutes.

Remove from the oven and allow the dip to cool for a couple minutes before serving.

Mix the dip so that the gooeyness of the mozzarella is evenly incorporated into the dip.

Serve warm with chips or crackers. Enjoy!
