Mint Strawberry Lemonade

Slightly sweetened lemonade with fresh strawberries and a hint of mint, a refreshing drink for a hot day.

Lemonades are perfect for any day. But what’s better than the classic lemonade? Lemonade with the slightest hint of mint and contains fresh chopped strawberries for added flavor and sweetness. Doesn’t that sound amazing to you? It takes a little bit more work to get that minty taste, but it is definitely worth it.

First, squeeze a large lemon to make about ¼ cup lemon juice. Place the lemon juice into a glass or a mason jar. Set it aside for now.

In a small pot, heat about a cup of water and sugar. You’ll need about 2 tablespoons of sugar but you can add more to taste.

Add 6-7 sprigs of mint. Yes, sprigs. My photo doesn’t show that, but you should use whole sprigs of mint to get the flavor. If you have mint that is starting to go bad, this is the perfect recipe for that. You need lots of mint to even get that mint flavor. Since you’re going to boil the mint anyway, it doesn’t matter that it’s starting to look wilted.

Stir to dissolve the sugar, and allow the water to simmer for about 5 minutes. Turn off the heat and allow it to sit for several minutes until it has cooled.

Once the sugar water has cooled, remove the mint. Pour the sugar water into the glass with the lemon juice. Stir to evenly mix the drink.

Add chopped strawberries and the leaves of one sprig of mint. Add a few ice cubes.

Serve the mint strawberry lemonade cold. If you allow the strawberries to sit awhile in the lemonade, the sweetness of the strawberries will diffuse into the lemonade.

This looks delicious! I have just given my father a recipe for lemonade as he has a load of lemon trees in his garden in Greece but I think I will have to make him up a batch of this for when he is over this month to give him ideas. Thanks for sharing!
